Recipe: Pepper omelette

Ingredients:

For 4 people:
- 7 eggs
- 1 red pepper
- 1 yellow pepper
- 1 white onion
- 5 sprigs of chives
- 2 tablespoons of milk
- 100g grated Gruyère cheese
- 3 tablespoons of olive oil
- salt & pepper

Instructions:

1) Peppers & onion:
Wash the peppers, open them, remove the white parts and any seeds. Chop the onion into thin slices.
Chop the peppers into small cubes and fry them in a pan for a few minutes on a low heat with a tablespoon of olive oil.
Add salt and pepper to taste.

2) Eggs:
Break 7 eggs into a large bowl, add 2 tablespoons of milk and beat with a whisk and a fork. Add your previously chopped chives.
Add salt and pepper to taste.

3) Cooking everything:
Heat 2 tablespoons of olive oil in a pan over a high heat. Add the eggs and leave to cook slowly. As soon as the edges start to set, add the peppers and onions and the 100g of grated gruyère cheese.
Leave it to cook for a few more minutes, and adjust the cooking time according to your taste: well cooked, more runny, etc. It is up to you!
Serve immediately on a plate!
